Pizze Incredibili

It's finally Friday.  An end to one of the weirdest weeks ever.  Looking forward to the weekend, to see my daddy dearest who is visiting, to relax (i.e. do assignments and study) and to sleep in (til 7am).
Every Friday night, is Cody and my "date night".  I knew at the start of this year that it was going to be extremely full-on.  Third year for dietetics students is a big step up from second year, and the way our course is set-up (not very organised) we are hard strapped for time.  Therefore, to ensure that Cody and I both stayed sane, and maintained a healthy relationship, we do date night every Friday night from 5pm.  This is a time where I am not allowed to do, talk, think, stress about anything uni.  Cody has a jar for which he puts money in, that goes towards the cause.  Most date nights we just chill and watch a movie at home, but Cody also organises some fun ones - boat hires, bike reading at Glasshouse Mountains, Maleny field trips, Point Cartwright picnics. And then sometimes we'll go out for dinner.  Tonight we are staying home. Watching a doco (Food Inc.).
The girls in the house have started a trend. Pizza! On Wednesday after coming home from work, Jordan had made the most amazing looking pizza ever, to the point where I was drooling on the table cloth.  And then today, Nikki had made an equally amazing one! So I just had to do it.  Make the pizza.  Make the most amazing pizza ever!
I don't eat a lot of wheat products - I am so-called gluten sensitive, where if I do eat too much gluten (a protein found in lots of grains such as wheat, oats, rye, triticale etc.) i notice i get irritable gut symptoms.  So I feel better if I just avoid it. Therefore, I wanted to try a new approach to the pizza.  A primarily vegetable based base!
For the base I mashed together two (medium size) steamed sweet potatoes, about a quarter of a tiny potato, some grilled mustard seeds, a can of cannelloni beans, one onion and a clove of garlic (fried).  I also put in some finely cut fresh parsley, coriander and oregano. After making into a smooth consistency I put one egg and some flour (use whatever type/s of flour you prefer).  The mix was still mostly sticky.  I then floured up a cutting board and the tray that the base was to go in, and kneed about half of it, adding flour every time I folded the mix over itself.  When I was happy with the consistency (it was heavy and didnt stick) I put the lump of mixture onto the tray and flattened it out to the edges with my fingers. 
I then baked it in the oven until slightly hard and light brown.
This mix made two 12inch pizza bases.

Then comes the fun part! The topping!
Be creative, put as many veggies as you can fit on top!


Tonight on our pizza we put; tomato paste (of course), spinach, zucchini, broccoli, grilled mushrooms and grilled eggplant.  I then made a cheese sauce (soy milk, cheese, corn flour and cayenne pepper) and put liberally over the top.
I really love grated carrot, baked beans and feta on pizza.  Nothing beats the way the baked beans become crispy in the oven! ....I'd eat baked beans with anything if I could....


Anyway I should go spend some time with my boy, seeing as it is date night....
