Slice up Your Life!

Strawcocoberrynut Slice 
(vegan, gluten free, dairy free, and diabetic-friendly)

This was a little dessert that I whipped up on an unhappy day, in the hope of cheering up my suddenly-single sister. I can't, however, guarantee that it was the slice, rather than my wonderful company, that cleared away the tears.

For the base I used:
around a cup and a half of almond meal
3/4 cup of pureed prunes
cup of dessicated coconut
1/4 cup melted coconut oil

Mix all the dry ingredients into the bowl, then add the pureed prunes.  Add the coconut oil ad lib until you reach your desired consistency.  Press into a shallow pan and cook in the oven until slightly hard. 

The topping included:
500g of strawberries
just a dash of prune juice (if you used tinned prunes for the base, if not put in some sort of juice of your preference)
dash of vanilla essence
1/2-3/4 cup dessicated coconut
150g of dairy-free 70-85% dark chocolate

Simmer the strawberries, vanilla essence and the juice on low heat over the stove top.  Stir continuously until syrupy consistency. Add the coconut to the mix.  Spoon, the mix onto your base.
Temper the dark chocolate over boiling water, and while hot spoon over the top of the strawberry topping.  Sprinkle a little bit more dessicated coconut over the top of the chocolate.
Refrigerate until dark chocolate is once again hard.

Variations:
You dont have to use strawberries.  Instead you could cherries, any sorts of berries, rhubarb, or anything that floats your boat! Or pitches your tent. Or boils your kettle. Or....haha just kidding.
